Delicious Vegan Nut-Free High-Protein Granola Bars

I used to find myself reaching for store-bought bars, but something was always missing – either they had nuts, which some of my friends couldn’t enjoy, or they were full of sugar. That’s when I decided to create my own vegan nut-free high-protein granola bars. These are not only delicious but also easy to make and perfect for a healthy boost of energy!

Vegan Nut-Free High-Protein Granola Bars

Ingredients
  

  • 1 ½ cups rolled oats certified gluten-free if needed
  • ½ cup sunflower seed butter or tahini
  • ¼ cup maple syrup or agave nectar
  • ¼ cup pumpkin seeds pepitas
  • ¼ cup sunflower seeds
  • ¼ cup hemp seeds
  • ¼ cup dried fruit raisins, cranberries, or chopped dates
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon optional
  • Pinch of salt
  • 2 tablespoons vegan chocolate chips optional

Instructions
 

Prepare the Pan:

  • Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Mix Wet Ingredients:

  • In a large bowl, stir together the sunflower seed butter, maple syrup, vanilla, and salt until smooth.

Add Dry Ingredients:

  • Stir in rolled oats, pumpkin seeds, sunflower seeds, hemp seeds, chia seeds, flaxseed, and dried fruit until well combined.

Press into Pan:

  • Transfer the mixture to the prepared pan and press it down firmly. Add optional vegan chocolate chips and press them lightly into the surface.

Chill:

  • Place the pan in the fridge for at least 1 hour to set.

Slice:

  • Once firm, lift the mixture out of the pan and slice it into bars.
