Delicious Vegan Nut-Free High-Protein Granola Bars

I used to find myself reaching for store-bought bars, but something was always missing – either they had nuts, which some of my friends couldn’t enjoy, or they were full of sugar. That’s when I decided to create my own vegan nut-free high-protein granola bars. These are not only delicious but also easy to make and perfect for a healthy boost of energy!

Vegan Nut-Free High-Protein Granola Bars
Ingredients
- 1 ½ cups rolled oats certified gluten-free if needed
- ½ cup sunflower seed butter or tahini
- ¼ cup maple syrup or agave nectar
- ¼ cup pumpkin seeds pepitas
- ¼ cup sunflower seeds
- ¼ cup hemp seeds
- ¼ cup dried fruit raisins, cranberries, or chopped dates
- 2 tablespoons chia seeds
- 2 tablespoons ground flaxseed
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon optional
- Pinch of salt
- 2 tablespoons vegan chocolate chips optional
Instructions
Prepare the Pan:
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
Mix Wet Ingredients:
- In a large bowl, stir together the sunflower seed butter, maple syrup, vanilla, and salt until smooth.
Add Dry Ingredients:
- Stir in rolled oats, pumpkin seeds, sunflower seeds, hemp seeds, chia seeds, flaxseed, and dried fruit until well combined.
Press into Pan:
- Transfer the mixture to the prepared pan and press it down firmly. Add optional vegan chocolate chips and press them lightly into the surface.
Chill:
- Place the pan in the fridge for at least 1 hour to set.
Slice:
- Once firm, lift the mixture out of the pan and slice it into bars.
