Buffalo Cauliflower Wings with Cashew Cream Sauce

Ingredients
  

  • 1 medium cauliflower head cut into florets
  • 1/2 cup flour or gluten-free flour
  • 1/2 cup unsweetened almond milk
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup buffalo sauce
  • 1 tbsp olive oil
  • Cashew Cream Sauce:
  • 1/2 cup raw cashews soaked for 2 hours
  • 1 garlic clove
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 cup water

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Mix the flour, almond milk, garlic powder, and paprika into a batter.
  • Coat the cauliflower florets in the batter, and bake for 25-30 minutes until golden.
  • Heat buffalo sauce and olive oil, then toss with baked wings and return to the oven for 5 minutes.
  • For the cashew cream, blend soaked cashews, garlic, lemon juice, salt, and water until smooth.
  • Serve the wings with a generous side of cashew cream sauce.
