Coconut-Crusted Buffalo Cauliflower Wings

Ingredients
  

  • 1 medium cauliflower head cut into florets
  • 1/2 cup flour or gluten-free flour
  • 1/2 cup unsweetened coconut milk
  • 1/2 cup shredded coconut
  • 1/2 cup buffalo sauce
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1 tsp garlic powder

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Mix the flour, coconut milk, garlic powder, and salt into a batter.
  • Dip each cauliflower floret into the batter, then roll in shredded coconut to fully coat.
  • Place on the baking sheet and bake for 25-30 minutes until golden and crispy.
  • Heat the buffalo sauce with olive oil in a small saucepan, then toss the baked cauliflower wings in the sauce.
  • Return to the oven for 5 minutes to crisp up, then serve hot.
