Homemade Vegan Chickpea Sausages – Easy & Delicious!

Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/2 cup rolled oats
  • 1/4 cup breadcrumbs use gluten-free if needed
  • 2 tbsp nutritional yeast
  • 1 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground fennel seeds for sausage flavor
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp ground flaxseed + 3 tbsp water flax egg

Method
 

  1. Prepare Flax Egg: In a small bowl, mix the ground flaxseed with water. Let it sit for 5 minutes to thicken.
  2. Mash Chickpeas: In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth but with some texture remaining.
  3. Mix Ingredients: Add the oats, breadcrumbs, nutritional yeast, soy sauce, olive oil, smoked paprika, garlic powder, onion powder, fennel seeds, thyme, and the flax egg. Mix until well combined.
  4. Form Sausages: Divide the mixture into 6 equal portions and shape into sausage-like rolls.
  5. Cook Sausages: Heat olive oil in a skillet over medium heat. Cook the sausages for 3-4 minutes on each side, turning occasionally, until golden brown and crispy on the outside.
  6. Serve: Serve with your favorite sides or in a bun for a sausage sandwich. Enjoy!
