Stir in the lentils, chili powder, smoked paprika, tomato sauce, ketchup, mustard, Worcestershire sauce, and maple syrup. Mix well and bring to a simmer. Cook for 5-10 minutes, stirring often, until the sauce thickens.
Taste the mixture and adjust seasoning with salt, hot sauce, or more maple syrup if desired.
Toast the burger buns in a skillet or toaster if desired. Spoon the sloppy joe mixture onto the buns. Add any desired toppings and serve hot.
