Press tofu with towels and a heavy object or tofu press for 20-30 minutes to remove moisture.
Cut pressed tofu into thin slices, about ¼ inch thick.
Marinate:
Mix olive oil, soy sauce, smoked paprika, garlic powder, onion powder, salt, pepper, and chili flakes (optional) in a bowl.
Toss tofu slices in marinade, coating evenly. Let sit 15-20 minutes.
Cook:
Oven: Preheat to 375°F (190°C). Arrange slices in a single layer on parchment-lined baking sheet. Bake 25-30 minutes, flipping halfway, until crispy.
Air Fryer: Preheat to 350°F (175°C). Arrange tofu in a single layer in the basket. Cook 15-20 minutes, shaking halfway through, until golden and crispy.
Cool and Serve:
Let cool for 5 minutes to crisp up further.
Serve immediately alone, with dips, or as crunchy salad toppers.
