Vegan Vanilla Pudding with Almond Butter Swirl Recipe

Ingredients
  

  • 2 cups almond milk
  • 1/3 cup sugar or sweetener of choice
  • 2 tbsp cornstarch
  • 1 tsp pure vanilla extract
  • 2 tbsp smooth almond butter or any nut butter of choice
  • Optional: crushed almonds or cacao nibs for topping

Method
 

  1. Whisk Ingredients: In a medium saucepan, whisk together the almond milk, sugar, and cornstarch until well combined.
  2. Heat and Thicken: Place the saucepan over medium heat, stirring constantly until the mixture thickens, around 5-8 minutes.
  3. Add Vanilla: Remove from heat and stir in the vanilla extract.
  4. Swirl in Almond Butter: Pour the pudding into individual serving dishes. Add a tablespoon of almond butter to each serving and gently swirl it through the pudding using a knife or spoon.
  5. Chill: Cover the pudding and refrigerate for at least 2 hours before serving.
  6. Serve: Top with crushed almonds or cacao nibs for an added crunch.
